Our cuts of meat are vacuumed packed, so that no preservatives, special enzymes, or radiation are needed. Did you know that some meat processors use carbon monoxide in their preservation process? You definitely won't find that here. No ammonia or any chemicals are used when processing.
Our beef is dry aged for at least 14 days. Dry aging our beef creates the most tender and flavorful meat possible. The process allows the beef's natural enzymes to break down the tough connective tissue in the meat, while the evaporation of water allows for a concentrated and rich flavor.
